We love quick, delicious and healthy food choices. Recipes that won’t keep you in the kitchen for hours, but still get everyone to smile when it you put the food on the table. Including yourself ???? ???? Coconut pannacotta with fresh strawberries ????
1 cup coconut milk
1 cup plain yoghurt
1 tsp vanilla extract
4 tbsp honey or stevia
10 g clear gelatin + 50 ml hot water

Fresh strawberries for serving

In a small bowl, add the gelatin and then the hot water. Stir until the gelatin is dissolved and liquid. Put a sauce pan on the stove and over a medium heat combine the yoghurt, coconut milk, vanilla and honey. Add the gelatin mix and mix thoroughly. Do NOT let the mixture boil.

When combined, pour panna cotta mix into jars or bowls. Enough for 4 to 5 servings. Leave in the fridge for 2 hours to set.
Cut up the strawberries to serve with panna cotta. Or get creative with your favorite fruit and flavor combinations!

Vegans can replace the yogurt with more almond, oat or coconut milk. Replace the gelatin with agar agar, just follow the directions on the package for needed quantity.
