Eating healthy doesn’t always feel convenient. And many ‘convenience’ foods are not healthy. They are loaded with hidden sugars and unhealthy fats. One of the biggest culprits is probably mayonnaise! It contains mostly saturated fats, preservatives and stabilizers. Finding ‘cleaner’ alternatives can help you adapt recipes at home in no time.
The recipe below substitutes regular mayonnaise with a mix of natural yoghurt, nut butter and a touch of acidity. It recreates the tangy creaminess but with more protein and healthy fats. What other smart substitutions do you use in your kitchen?
Chicken ‘mayo’ lettuce cups
1 chicken breast – cooked and finely shredded
½ an apple – cut into small cubes
5cm piece of celery – cut into small cubes
Small handful of nuts finely chopped ‘Mayo’ dressing
3 tablespoons greek yoghurt
1 tablespoon cashew/macadamia/almond butter
1 teaspoon apple cider vinegar
½ teaspoon curry powder or mustard
Squeeze of honey
Salt and pepper to taste
Two lettuce cups
Mix all the chopped ingredients in a bowl. Combine the dressing and combine. Spoon into lettuce cups and enjoy!
Try adding some avo and fresh herbs for variation.
Vegetarian? Use canned chickpeas instead instead of chicken!
