Not always everyone’s favorite, but broccoli is a great addition to your plate for various reasons!
Its low in calories and packed with fiber which helps you feel fuller and satiated. Great for when you are trying to lose weight. All that fiber also helps to keep your digestion healthy and on track.
It has all the good stuff your body needs. Calcium, iron, potassium, magnesium, zinc and vitamins A, B, C, D & K. It keeps your nervous system and muscles healthy, making it an ideal post-workout recovery food.

For the salad:
2 cups steamed broccoli
2 spring onions sliced
Handful of toasted almonds
For the dressing:
2 Tbsp of peanut butter (sugar free)
3 Tbsp soy sauce
2 Tbsp lime juice
2 Tbsp honey
1/3 cup of water or more if still very thick
1 Tsp fresh ginger grated
1 Tsp sesame oil
Combine the dressing and drizzle over the broccoli. Top with toasted almonds.
Add some grilled chicken, roasted sweet potato or boiled egg to your plate to make it a complete protein rich meal.
